So you’re doing your best to eat better. You have the basic idea- lean protein, veggies, and maybe a smart carb choice with every meal- but now it’s Thursday night and you are staring down the barrel of a 4th night in a row of eating chicken breasts with broccoli (because you prepped a bunch on Sunday, right?). Probably doesn’t sound too appetizing.
And that’s exactly when you grab your phone and order a pizza.
If you’re out of other ideas, or you just plain need a change of pace, it’s great to have something different on hand. And wouldn’t it be awesome if that something different had a ton of flavor to punch up your tired meal AND packed a ton of nutrition along with it?
That’s why you need to have some pesto ready to go in your freezer. It’s good on chicken, burgers, veggies, potatoes, etc.
Next time you see a big bunch of basil at the grocery store or farmers market, grab that thing and throw it in your basket. Throw in some fresh garlic, pine nuts, extra virgin olive oil, and some Parmesan cheese (or nutritional yeast if you are looking for a vegan recipe), and you’ve got yourself the makings of a simple pesto.
After you whip up a batch, use what you want to use that night, and freeze the rest so when you run into a Thursday night dilemma again you’ll be armed and ready! You can freeze the leftovers in an ice cube tray, or line a baking pan with parchment paper, pour it on top, and cover with more parchment.
2 cups finely chopped basil leaves
1/3 cup pine nuts
1/2 cup extra virgin olive oil
3 garlic cloves
1/2 cup freshly grated Parmesan cheese (or 3 tbsp nutritional yeast to make it vegan)
1/4 tsp salt
1/8 tsp pepper
