Easy Egg Bites
Add these to your weekly prep list and never get caught without a quick and easy breakfast, high protein snack, or reasonably healthy late-night nosh.
1/3 cup almond flour
2 tbsp butter or olive oil
1/2 a red pepper, diced
1/2 a small onion, diced
3oz crimini mushrooms, sliced
1/2 cup shredded mozzarella cheese
- preheat oven to 350
- heat butter/oil in medium sized pan and add onion, peppers, onions. Saute until soft, 5-7 min
- add eggs, almond flour, and veggie mix together in a large bowl and mix well
- put egg mixture in each cup of a non-stick muffin tin (or use the special silicone muffin cups) and bake for 15-20 min, until browned on top and you don’t see any liquid egg remaining.
- eat them right away or store them in a ziplock bag for when you need a high protein snack
Note: These might be the planet’s most versatile foods. You can change up the veggies and cheese you use to make whatever you think you’d like!
Here’s a few ideas to get you started. Just follow the same directions, but with these ingredients
spinach and feta, broccoli and sweet potato, black bean and monterey jack , asparagus and colby cheese, sausage mushroom and cheddar. Get creative and let it rip!
