Summer’s Secret Sauce
Now that June has hit and farm stands are in full swing with early summer crops like asparagus, green garlic, salad greens, and chives, it’s time to take a look at this underrated veggie that’s in a league of its own.
Rhubarb is a veggie that plays nice with fruits like strawberries, cherries, and peaches, and brings a tart flavor to any dish that is at risk of being bland. In our house I call this the Secret Sauce, and we use it on a lot of different things from oatmeal to ice cream, to grilled chicken. When you see some at your local farm stand or farmers market, grab it and give this recipe a shot. It will wake up whatever you’re preparing, and add a bunch of Vitamin C, potassium, and fiber to it at the same time. Feel free to experiment with adding different fruits, raisins, lemon/orange zest, or herbs to this depending on what you like. It’s really versatile, and be aware, it’s pretty tart!
6 cups fresh rhubarb, chopped
1/4 cup water
1/2 cup raw honey (more or less to taste)
1/2 teaspoon salt
- add all ingredients to a pot and bring to a boil
- stirring often, cook down until the mixture has the consistency of applesauce.
