Breakfast of (Olympic) Champions
A certain cereal used to be called the “Breakfast of Champions,” but I’m taking the title and applying it to this beauty!
And what better time to bring this up than the day the Winter Olympics start in PyeongChang. I call for kimchi in this but lets be honest… a lot of you just aren’t going to be too into that. First, it’s not always easy to find. Second, you might have zero idea what it is. Third, it takes a couple weeks to make your own (like your own saurkraut, it lacto-ferments for 2-3 weeks before it gets the beneficial bacteria and sour taste associated with lacto-fermented foods). If you aren’t into kimchi, you can always replace it with salsa, saurkraut, or you favorite veggie, but you’d be missing out on all the beneficial bacteria from the kimchi. Check out The Brinery’s version. It’s awesome, and available at better grocery stores around Ann Arbor.
If you’re going to pass on the kimchi, you can substitute your favorite salsa or saurkraut.
- Melt butter in a pan over medium heat
- Pour in eggs and scramble until done to your liking.
- Add eggs to a bowl and top with the veggie of your choice.
